I love eggs and I literally can eat it for breakfast, lunch and dinner and not be tired of it. I have to have eggs for breakfast or otherwise I go berserk. Even my man makes fun of me saying that I'm a creature of habit. That I am.
When I was studying abroad in France, I discovered quiches. It was basically an extension of my egg obsession. I found this recipe awhile back, but I always make it with a crust. The crust makes the whole thing! I would definitely recommend wringing the spinach fully to get rid of any excess water and blending everything in a blender. The results were delicious and (more or less) nutritious.
