Clementine Cream Pie

Clementine Cream Cake

Once in a lifetime you meet a friend and that friend was Elise for me. We met about a year ago at this crappy (I mean VERY shitty) firm and became instant friends. We came up with this ritual called Friday night / Drunk kitchen and it all started with us getting drunk and me teaching Elise to cook all things American. Case in point, we got too drunk on Cosmos whilst making a pumpkin pie and I burned myself. 

So when we told me that she is going back to France, naturally, I was devastated. But in our usual fashion, we decided to have ourselves last Friday night / Drunk kitchen. I made this Clementine Cream Pie following the recipe from Jane Hornby's book What to Cook and How to Cook it: Fresh & Easy, substituting strawberries for clementines because I just had them around. The results were a delicious memory.
