Summer Appetizers

Caprese Appetizer

I don't know about you, but the last thing I want to do during summer is cook. And I LOVE cooking. I also like having people over and feeding them. So in hopes of not breaking a sweat, I made these three apps along with some cheese, crackers and crudites. Needless to say, it was all gone by the end of the night. 

1) Melon balls and proscuitto - scoop out melon into balls, stick delicious proscuitto on top with a drizzle of balsamic

2) Caprese apps - assemble mozzarella balls with basil and cherry tomatoes

3) Pea and mint pesto with salami - thaw frozen peas, throw it in the blender with EVOO, mint, salt, pepper and about 2 cloves of garlic. If you feeling really fancy, add some parmesan. Blend together and assemble on a good baguette, like from Maison Kayser. Top with salami or proscuitto and voila!
