When I first heard of a cheesecake, my first thought was "A cake made out of cheese? Why would anyone want to eat it?" But then I tried it, and oh my! I was forever changed. I tried this recipe, but I gotta admit, most cheesecakes are a tad dense for my liking. Here's my secret, whip it with a handheld mixer or any other mixer as you're incorporating all the ingredients slowly. The end result will resemble a ricotta cheesecake with the deliciousness of a regular one. Enjoy :-)!
