Fall is an awesome season for exactly 2 reasons: 1) holidays like Halloween and my birthday (yes, it’s a holiday because it tends to fall on Columbus day most of the time) and 2) soups. As a child, I hated soups and I mean, I HATED them. However, my tastes began to change as I began to grow up. Butternut squash is one of my all time favorites. I used this recipe (minus the apple) and end result was as yummy as it looks. I hope you enjoy!
